Sugar snap pea puree
Ricotta cheese (find recipe on Simple Servings)
Pecorino romano – thinly shaved
Mint leaves – cut into slivers
To make the sugar snap pea puree:
Add 1 teaspoon of salt to a small pot of water. Bring to the boil. Add 1 heaping cup of sugar snap peas to the water and boil for two minutes. Drain.
Place the sugar snap peas into the bowl of a food processor. Add 2 tablespoons of olive oil and sea salt and pepper to taste. Pulse the sugar snaps until they begin to form a fine paste. Scrape the sides of the bowl and pulse again until fairly smooth.
To assemble your bruschetta:
Smear your baguette slice with fresh ricotta. Sprinkle on some mint leaves. Put a spoonful of sugar snap pea puree on top of the mint leaves. Place one slice of the pecorino romano on top.
Invite a few friends over. Serve with some chilled rose or prosecco and feel like a grown-up! Enjoy!
